​ Fried Squirrel 

​

2 Squirrels skinned, gutted, and cut into pieces

chopped onion
salt
baked potatoes

cooking oil like corn oil

water for boiling squirrels

flour

one egg beaten
 

Directions  

Cut up squirrels. Bring to a boil in a pan and simmer for one hour. Roll in flour and then dip in a beaten egg and roll back in the flour again. Fry in a skillet with oil. Brown on both sides. Add salt. Serve with chopped onion and baked potatoes.

 Squirrel Stew 

​

2-3 squirrels skinned, gutted, and cut into pieces

1 large can diced tomatoes  

1 chopped onion  

3 chopped carrots

3 cut up potatoes

water

salt

cayenne pepper

​

Put squirrels and vegetables in a pot.  Add water up to the top of the food. Bring to a boil, and then lower heat to simmer for an hour or more, until the squirrel and vegetables are tender. Add salt and cayenne pepper to taste.
